Is it possible in the admin section of the EE to turn off (or not display) some of the options available? To start, the client we’re creating the site for won\’t actually be using EE to manage ticket sales and such, so we only want to use EE as an event creation/list too, rather than a full-blown event manager. We don’t want to overwhelm the client with irrelevant choices if we don’t have to.

Not at the moment. However, this will be an option when we release EE 3.2 in coming months.
If you really wanted to though, you could hack the add/edit event functions. Then just remember to merge the changes when updates are released.
