Does the system send out a notification email that someone has signed up / registered or would I need to login into WordPress to see that sort of thing?

It does send these to a contact email you specify, and any other emails you enter into the “Alternate admin address” field for the event. Note that this can be set up to send before or after a payment for an event is made.
