We occasionally need to change the event options a person has selected, but you can’t do it from the Attendee page. I’m not sure if that makes sense so I’ll explain further.
My client offers a beginning sewing class on Mondays (in the am and the pm) she also offers the same class on Tuesday (in the am or the pm). A user has to select which series and what time they want from the options drop down. If they change their mind they can call my client and ask for a different day or time, my client wants to be able to go into the class and re-assign them – it will allow her to change the time, but not the day (option).
Is this something that could be accomplished in some way?

Not really, but you could add an “admin only” question to the event’s registration form to make a note of the change and then adjust the limits of the class accordingly.
Alternatively, the attendee could be removed from that slot, and re-registered.
