I will have a website that provides courses, which users can book, and pay for.
Each course has a top level category, ie: Antenatal Courses, then a listing of each date that a course is available on, ie:
March courses
Monday, 4 March – 7.30-9.30pm
Thursday, 7 March – 7.30-9.30pm
Monday, 11 March – 7.30-9.30pm
April courses
Thursday, 11 April – 7.30-9.30pm
Monday, 15 April – 7.30-9.30pm
Thursday, 18 April – 7.30-9.30pm
I would like the admin user to add a course, put it into a category, and give it a date. I’d then like to display the courses in the front-end as above, when clicked on the user will go through to a single page, with full course details and a booking form, with a payment option.
Would this be possible?

This should be possible using the Multiple Event Registration add-on that is included in the Business License. You can use shortcodes to display events in specific categories on a page.
Yep. You can purchase a Personal License and the Multi Event Registration add-on. You don’t need the Biz or Dev license to use Multi Event Registration.
