Is it possible to create events without start/end dates? I need this option for courses that will start when a specific number of people register.

You can make the event an ONGOING event, which doesn’t pay attention to start/end dates. For the event to actually appear on the calendar it needs a start/end date, and start/end dates and times will be inserted for you by default if you leave them blank. You can update the event to remove the start date and time, but the “Date: ” line will still appear on the reg form unless you remove it from the template or with CSS.
