I am wondering why we should set up questions to ask for attendees email and handphone number. which they have already provided at the point of registration.
Also how can I put the DAY (eg. mon, tue) inside the ticket. eg. Date: October 11, 2012 to be shown as Date: Thursday October 11, 2012.

Not sure what you mean here, but it depends on what info you need as the event organiser. As a default the plugin only requires first and last names and email to function.
Regarding the day, the ticket takes it from the the WordPress General Settings date format, so you can change that. So for example to have Friday October 5th 2012 you would add the custom date format of l F jS Y.
This will change the date format across the site and plugin though, so all dates will show the same format.
