I know how to create custom emails that go to the registrant when they register or pay.

But is there a way to customize the content of the email that goes to the event manager letting them know someone registered?

There isn’t a feature that allows for customizing the contents of the email sent the admin. There are plans to add something like this in a future version. The admin emails are generated from functions in /includes/functions/email.php. If you’re comfortable with editing these functions, they could be customized there. Note these changes will be overwritten on a software update, so these should be backed up somewhere safe.
